- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 2 cups fresh strawberries, sliced
- 2 cups fresh peaches, sliced
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the heavy cream until just combined.
- Turn the dough onto a floured surface and knead gently.
- Roll out to about 1-inch thickness and cut into rounds.
- Place on a baking sheet and bake for 15-20 minutes until golden.
- While the shortcakes cool, whip the mascarpone, powdered sugar, and vanilla until smooth.
- Assemble the shortcakes by layering strawberries and peaches between the shortcake layers and topping with whipped mascarpone.
- Serve immediately and enjoy!
Notes
- For best results, use ripe peaches and strawberries.
- Shortcakes can be made a day in advance and stored in an airtight container.
