Description

A delightful summer dessert featuring layers of fresh peaches and strawberries, fluffy shortcake, and whipped mascarpone cream.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 2 cups fresh strawberries, sliced
  • 2 cups fresh peaches, sliced
  • 1 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined.
  5. Turn the dough onto a floured surface and knead gently.
  6. Roll out to about 1-inch thickness and cut into rounds.
  7. Place on a baking sheet and bake for 15-20 minutes until golden.
  8. While the shortcakes cool, whip the mascarpone, powdered sugar, and vanilla until smooth.
  9. Assemble the shortcakes by layering strawberries and peaches between the shortcake layers and topping with whipped mascarpone.
  10. Serve immediately and enjoy!

Notes

  • For best results, use ripe peaches and strawberries.
  • Shortcakes can be made a day in advance and stored in an airtight container.
