- 2 medium zucchinis
- 1 cup shelled edamame
- 3 tablespoons peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon honey or maple syrup
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon sesame seeds
- Chopped green onions for garnish
Instructions
- Spiralize the zucchinis to create zoodles.
- In a small bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger until smooth.
- In a large skillet, heat the zoodles over medium heat for 2-3 minutes until slightly softened.
- Add the edamame to the skillet and cook for another 2 minutes.
- Pour the peanut-sesame sauce over the zoodles and edamame, tossing to coat evenly.
- Cook for an additional 2 minutes until everything is heated through.
- Serve hot, garnished with sesame seeds and chopped green onions.
Notes
- For a spicier kick, add red pepper flakes to the sauce.
- Feel free to substitute the edamame with cooked chicken or tofu for added protein.
