A delicious and healthy dish made with spiralized zucchini noodles, tossed in a savory peanut-sesame sauce and mixed with edamame for added protein.


Ingredients

  • 2 medium zucchinis
  • 1 cup shelled edamame
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds
  • Chopped green onions for garnish

Instructions

  1. Spiralize the zucchinis to create zoodles.
  2. In a small bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger until smooth.
  3. In a large skillet, heat the zoodles over medium heat for 2-3 minutes until slightly softened.
  4. Add the edamame to the skillet and cook for another 2 minutes.
  5. Pour the peanut-sesame sauce over the zoodles and edamame, tossing to coat evenly.
  6. Cook for an additional 2 minutes until everything is heated through.
  7. Serve hot, garnished with sesame seeds and chopped green onions.

Notes

  • For a spicier kick, add red pepper flakes to the sauce.
  • Feel free to substitute the edamame with cooked chicken or tofu for added protein.
