- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices thick-cut dill pickles
- 1 tablespoon chopped fresh chives (optional)
- Oil for frying
Instructions
- Marinate the chicken: Place chicken thighs in a large bowl or zip-top bag, pour in dill pickle juice, ensure chicken is submerged, and refrigerate for at least 1 hour.
- Prepare the coleslaw: In a mixing bowl, combine coleslaw mix with mayonnaise, apple cider vinegar, sugar, salt, and pepper, and stir until well combined.
- Whisk together the flour, cornstarch, Cajun seasoning, garlic powder, and paprika in a shallow dish.
- Dredge the chicken: Remove the chicken from the brine, pat it dry, and dredge each piece in the flour mixture.
- Heat the oil in your frying pan over medium-high heat to 350°F and fry each chicken piece for 5-6 minutes on each side.
- Assemble the sandwich by toasting brioche buns, spreading mayonnaise on the bottom, and layering with lettuce, fried chicken, coleslaw, dill pickles, and optional chives.
