  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices thick-cut dill pickles
  • 1 tablespoon chopped fresh chives (optional)
  • Oil for frying

Instructions

  1. Marinate the chicken: Place chicken thighs in a large bowl or zip-top bag, pour in dill pickle juice, ensure chicken is submerged, and refrigerate for at least 1 hour.
  2. Prepare the coleslaw: In a mixing bowl, combine coleslaw mix with mayonnaise, apple cider vinegar, sugar, salt, and pepper, and stir until well combined.
  3. Whisk together the flour, cornstarch, Cajun seasoning, garlic powder, and paprika in a shallow dish.
  4. Dredge the chicken: Remove the chicken from the brine, pat it dry, and dredge each piece in the flour mixture.
  5. Heat the oil in your frying pan over medium-high heat to 350°F and fry each chicken piece for 5-6 minutes on each side.
  6. Assemble the sandwich by toasting brioche buns, spreading mayonnaise on the bottom, and layering with lettuce, fried chicken, coleslaw, dill pickles, and optional chives.
