  • 1 cup crushed pineapple, drained
  • 1/2 cup sweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line your cupcake pan with vibrant cupcake liners.
  2. Whisk the dry ingredients: In a medium bowl, combine the flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Incorporate the eggs one at a time, mixing thoroughly after each addition, followed by the vanilla extract.
  5. Combine the dry and wet ingredients, alternating with the coconut milk, until just combined.
  6. Fold in the drained crushed pineapple and shredded coconut.
