- 1 cup purple cabbage, shredded
- 1/2 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Cook the glass noodles according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked glass noodles with the sliced bell peppers, carrots, cucumber, purple cabbage, green onions, and cilantro.
- In a small bowl, whisk together the soy sauce, sesame oil, lime juice, salt, and pepper.
- Pour the dressing over the noodle and vegetable mixture and toss to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
