Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the sugar, vegetable oil, egg, food coloring, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth to create the filling.
  6. Chill the cookie dough in the refrigerator for 30 minutes.
  7. Once chilled, scoop a tablespoon of dough, flatten it, and place a teaspoon of cream cheese filling in the center. Enclose the filling with the dough and roll into a ball.
  8. Roll the cookie balls in powdered sugar and place them on a baking sheet lined with parchment paper.
