Delightful rhubarb cinnamon rolls that combine sweet and tangy flavors for a comforting treat.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 cup rhubarb, chopped
  • 1 tsp cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C) to ensure the rolls bake evenly.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
  3. In a separate bowl, whisk together the milk, melted butter, and egg.
  4. Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
  5. Gently fold in the chopped rhubarb, ensuring even distribution.
  6. Turn the dough onto a floured surface and roll it out into a rectangle about 1/4-inch thick.
  7. Sprinkle the brown sugar and cinnamon evenly over the surface.
  8. Roll the dough tightly from one long side to the other and slice into equal pieces about 1 inch thick.
  9. Arrange the slices on a greased baking sheet or in a baking dish.
  10. Bake for 20-25 minutes, until golden brown and the rhubarb is bubbly.
  11. Remove from the oven and let cool slightly before serving.
