- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup sugar

- 2 cups rhubarb, chopped

- 3 large eggs

- 1 teaspoon vanilla extract
- 1/4 teaspoon salt (for custard)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- Combine 1 cup of flour, softened butter, 1/4 cup of sugar, and 1/4 teaspoon of salt in a mixing bowl. Mix until crumbly and then press into the bottom of your prepared baking dish.
- Bake the crust for 10-12 minutes, or until light golden.
- In another bowl, whisk together 2 cups of rhubarb, 1 cup of sugar, 3 eggs, 1/4 cup of flour, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt until smooth.
- Pour the custard mixture over the warm crust.
- Bake for 30-35 minutes, or until lightly golden and set.
- Cool completely in the dish before cutting into squares.
- Enjoy as they are or sprinkle with powdered sugar.
Notes
You can prepare these bars a day in advance and serve at room temperature for best texture. Feel free to add diced strawberries or blueberries for additional flavor.
