Description

Delight in the tangy and sweet flavor of Rhubarb Custard Bars, perfect for spring and summer gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 2 cups rhubarb, chopped
  • 1 cup sugar (for custard)
  • 3 large eggs
  • 1/4 cup all-purpose flour (for custard)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (for custard)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Combine 1 cup of flour, softened butter, 1/4 cup of sugar, and 1/4 teaspoon of salt in a mixing bowl. Mix until crumbly and then press into the bottom of your prepared baking dish.
  3. Bake the crust for 10-12 minutes, or until light golden.
  4. In another bowl, whisk together 2 cups of rhubarb, 1 cup of sugar, 3 eggs, 1/4 cup of flour, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt until smooth.
  5. Pour the custard mixture over the warm crust.
  6. Bake for 30-35 minutes, or until lightly golden and set.
  7. Cool completely in the dish before cutting into squares.
  8. Enjoy as they are or sprinkle with powdered sugar.

Notes

You can prepare these bars a day in advance and serve at room temperature for best texture. Feel free to add diced strawberries or blueberries for additional flavor.
