- 2 cups rhubarb, chopped
- 1 cup sugar
- 1 cup water
- 1 package (3 oz) strawberry Jello
Instructions
- Combine Ingredients: In a medium saucepan, place the chopped rhubarb, sugar, and water. Stir gently to mix the ingredients together.
- Bring to a Boil: Heat over medium flame, watching closely. As the mixture heats, the sugar will dissolve and the rhubarb will begin releasing its juices. Bring to a boil, stirring occasionally.
- Simmer: Once boiling, reduce the heat to low. Allow the mixture to simmer for about 10–15 minutes, or until the rhubarb is fork-tender and breaks down easily.
- Stir in Jello: Remove the saucepan from heat. Sprinkle the strawberry Jello over the warm rhubarb mixture, and stir vigorously until the Jello is completely dissolved.
- Cool and Set: Allow the mixture to cool to room temperature. Once cooled, transfer it to a container and refrigerate until set, usually about 2–3 hours.
- Serve and Enjoy: Once set, serve this delicious sauce chilled.
Notes
Add vanilla extract or cinnamon for extra flavor. Great for meal prep and can be stored for up to a week.
