Ingredients

- 1 lb fresh salmon fillets
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1 egg
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1 ripe avocado, diced
- 1 cup cabbage, shredded
- 1/4 cup cilantro, chopped
- 1 tbsp olive oil
- 1 tbsp lime juice
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the salmon, breadcrumbs, green onions, egg, Dijon mustard, lemon juice, salt, and pepper. Mix well and form into patties.
- Grill the salmon patties for about 4-5 minutes on each side or until cooked through.
- In another bowl, mix the avocado, cabbage, cilantro, olive oil, lime juice, and season with salt and pepper to make the slaw.
- Serve the salmon burgers topped with the avocado slaw.
Notes
- For a spicier kick, add diced jalapeños to the slaw.
- These burgers can also be baked in the oven at 375°F for 15-20 minutes.
- Serve with whole grain buns for a healthier option.
