Description

Salmon Burgers with Avocado Slaw is a delicious and healthy meal option that combines the rich flavors of salmon with a refreshing avocado slaw.


Ingredients

  • 1 lb fresh salmon fillets
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • 1 cup cabbage, shredded
  • 1/4 cup cilantro, chopped
  • 1 tbsp olive oil
  • 1 tbsp lime juice

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the salmon, breadcrumbs, green onions, egg, Dijon mustard, lemon juice, salt, and pepper. Mix well and form into patties.
  3. Grill the salmon patties for about 4-5 minutes on each side or until cooked through.
  4. In another bowl, mix the avocado, cabbage, cilantro, olive oil, lime juice, and season with salt and pepper to make the slaw.
  5. Serve the salmon burgers topped with the avocado slaw.

Notes

  • For a spicier kick, add diced jalapeños to the slaw.
  • These burgers can also be baked in the oven at 375°F for 15-20 minutes.
  • Serve with whole grain buns for a healthier option.
