- 200 g active sourdough starter
- 700 g bread flour
- 500 g water
Instructions
- Combine the active sourdough starter, bread flour, and water in a large mixing bowl until a shaggy dough forms.
- Let the dough rest for about 30 minutes to allow autolyse.
- Knead the dough in the bowl for about 5 minutes until smooth and elastic.
- Cover the bowl with a damp cloth and let it rise in a warm spot for 4 to 6 hours, or until doubled in size.
- Turn the dough out onto a floured surface, divide into two pieces, and shape into loaves.
- Transfer the loaves into greased loaf pans, cover, and let rise for another 1 to 2 hours.
- Preheat the oven to 450°F (230°C).
- Bake for 30-35 minutes until golden brown and hollow-sounding when tapped.
- Remove from pans and cool on a wire rack before slicing.
Notes
For a crispy crust, consider using a Dutch oven. Avoid cutting into the bread before it cools to prevent a gummy texture.
