Ingredients

- 150 g sourdough discard
- 350 g bread flour
- 220 g warm water
- 1 tsp salt
- 1/2 tsp instant yeast
Instructions
- Combine the sourdough discard, warm water, and instant yeast in a large mixing bowl. Stir until blended.
- Add the bread flour and salt to the mixture and mix until a shaggy dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Grease a bowl and place the dough inside, covering it with a kitchen towel to rise for about 1 hour.
- Preheat your oven to 220°C (430°F).
- Punch down the risen dough gently and shape it into a loaf.
- Place the shaped dough in a parchment-lined loaf pan and let it rise for another 30 minutes.
- Bake the loaf for 25-30 minutes until golden brown and hollow sounding when tapped.
- Cool the bread on a wire rack before slicing.
Notes
For a crispy alternative, use an air fryer at 180°C (350°F) for shorter baking time. You can customize the flavor with herbs or seeds.
