- 1 lb large shrimp, peeled and deveined
- 1/2 lb lump crab meat or crab legs
- 1/2 lb cooked crawfish (optional)
- 2 ears of corn, cut into pieces
- 2 medium potatoes, diced
- 4 tablespoons garlic, minced
- 4 tablespoons Cajun seasoning
- 4 tablespoons butter
- 8 small tortillas
- 1/2 cup creamy sauce (e.g., ranch or aioli)
- Fresh cilantro for garnish
Instructions
- Start by boiling: In a large pot, bring water to a boil and add the diced potatoes. Cook for about 10 minutes, or until they are slightly tender.
- Add the corn and shrimp: Toss in the corn pieces along with the shrimp. Cook until the shrimp turns pink and opaque, about 3-4 minutes.
- Drain and return: Carefully drain the pot, returning the seafood and vegetables back to it.
- Add in the aromatics: To the pot, add butter, minced garlic, and Cajun seasoning. Stir well.
- Assemble your tacos: Warm your tortillas then fill each with the seafood mixture.
- Dress and garnish: Top each taco with creamy sauce and sprinkle with cilantro.
