Let’s take a closer look at each ingredient and the role it plays in the dish.

  • ½ tsp smoked paprika – Contributes a subtle smokiness and warm color to the potatoes and vegetables.

  • 2 cups shredded cheddar cheese – Melted over the top for that gooey, cheesy finish that makes this dish so craveable.

Instructions

Step 1: Preheat the Oven and Prep the Pan

Preheat your oven to 400°F (200°C). While it heats, line a large sheet pan with parchment paper, or lightly grease it with a bit of olive oil or nonstick spray. Using parchment paper makes cleanup especially easy and helps prevent the potatoes from sticking as they roast.

Step 2: Season and Roast the Potatoes First

In a large mixing bowl, toss the halved baby potatoes with the olive oil, half of the ranch seasoning packet, garlic powder, onion powder, smoked paprika, salt, and black pepper. Make sure each potato half is evenly coated in oil and seasoning — this is where a lot of the dish’s flavor foundation comes from.

Spread the seasoned potatoes onto one side of the prepared sheet pan in a single, even layer. Giving them their own space (rather than crowding the pan right away) allows them to get a head start on cooking and gives them the best chance at developing a golden, slightly crisp exterior. Bake for 15 minutes.

Step 3: Add the Meatballs and Vegetables

After the potatoes have had their initial roasting time, remove the sheet pan from the oven. Add the frozen meatballs, broccoli florets, and baby carrots to the pan. If the pan looks dry or the vegetables need a bit more coating, drizzle with a little extra olive oil.

Sprinkle the remaining ranch seasoning over everything on the pan. Gently toss all the ingredients together directly on the sheet pan, making sure the meatballs and vegetables get coated in the seasoning and any rendered juices from the potatoes. Spread everything back out into an even layer so it roasts evenly rather than steaming.

Step 4: Roast Until Everything Is Tender and Cooked Through

Return the sheet pan to the oven and bake for 20 to 25 minutes. You’re looking for the potatoes to be fork-tender, the broccoli and carrots to be roasted with slightly crisped edges, and the meatballs to be heated through completely. If your oven tends to run cool, or your potatoes were cut larger than bite-sized, you may need a few extra minutes — just keep an eye on things and test a potato for doneness.

Step 5: Add the Cheese

Once everything is roasted and tender, remove the pan from the oven and sprinkle the shredded cheddar cheese evenly over the meatballs and vegetables. Return the pan to the oven for an additional 3 to 5 minutes, just until the cheese is fully melted, bubbly, and starting to turn golden in spots.

Step 6: Garnish and Serve

Remove the pan from the oven and sprinkle the fresh chopped parsley over the top for a pop of color and a touch of freshness. Serve hot, straight from the pan, with a side of ranch dressing or your favorite dipping sauce for extra flavor.
