Description

A delightful fusion of flavors and textures, these S’mores Sushi Rolls combine crispy Rice Krispies with a gooey core of marshmallows and chocolate, resembling the beloved campfire treat in a fun sushi format.

Ingredients

Scale
  • 3 cups (150g) Rice Krispies cereal
  • 4 cups (200g) mini marshmallows
  • 3 tbsp butter
  • 1/2 cup (85g) chocolate chips, melted
  • 1/2 cup (50g) graham cracker crumbs
  • 1/2 cup (25g) extra mini marshmallows for filling
  • 1 tbsp coconut oil

Instructions

  1. Melt the butter in a large saucepan over low heat, then add the mini marshmallows, stirring until melted and smooth.
  2. Remove the saucepan from heat and fold in the Rice Krispies until evenly coated.
  3. Press the mixture into a flat rectangle on parchment paper, about 1/4 inch thick.
  4. Sprinkle graham cracker crumbs and extra marshmallows over the mixture, then drizzle with melted chocolate.
  5. Roll the mixture tightly into a log shape using the parchment paper.
  6. Chill in the refrigerator for 30 minutes to firm up.
  7. Slice into rounds and drizzle with additional chocolate if desired.

Notes

These rolls can be made a day in advance and stored in an airtight container. For a crisper bite, you can bake the mixture in a greased pan at 350°F (175°C) for 10-15 minutes.
