Ingredients

- 300 g all-purpose flour
- 65 g granulated sugar
- 2 tsp baking powder
- 100 g cold butter, cubed
- 1 tsp salt
- 1/2 cup dried cranberries
- 1/2 cup orange juice
- 1 egg
- 1 tsp vanilla extract
- Zest of 1 orange
Instructions
- Preheat the oven to 200°C (400°F).
- Combine the flour, sugar, baking powder, and salt in a large bowl.
- Add the cold butter and mix until the mixture resembles coarse crumbs.
- Stir in the dried cranberries and orange zest.
- Whisk together the orange juice, egg, and vanilla extract in another bowl.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Turn the dough onto a floured surface and knead gently.
- Pat the dough into a circle about 1 inch thick and cut into 8 wedges.
- Place the scones on a baking sheet lined with parchment paper.
- Bake for 18-22 minutes until golden brown.
- Let cool slightly before serving.
Notes
Keep the butter cold for best results. You can prepare the dough ahead of time and refrigerate it.
