- 400 g bread flour
- 100 g whole wheat flour
- 100 g active sourdough starter
- 350 g water
- 10 g salt
Instructions
- Begin by mixing the bread flour, whole wheat flour, and water in a large bowl. Allow the mixture to rest for about 30 minutes to an hour, a process known as autolyse.
- After autolyse, add your bubbly active sourdough starter and salt to the mixture. Combine thoroughly until fully incorporated; you should see the dough start to come together.
- Knead the dough for about 10 minutes until it turns smooth and elastic.
- Transfer the dough to a lightly greased bowl, cover it with a damp cloth, and let it rise for about 240-360 minutes at room temperature, or until it has doubled in size.
- Once adequately risen, turn your dough out onto a floured surface and shape it gently. Nestle it into a proofing basket seam side up.
- Preheat your oven to 450Β°F (232Β°C), placing a Dutch oven inside to heat.
- Carefully transfer the proofed dough into the hot Dutch oven. Score the top with a sharp knife.
- Bake for 30 minutes with the lid on, then remove the lid and bake for an additional 15-20 minutes until the bread turns a glorious golden brown.
- Let your loaf cool on a wire rack before slicing.
Notes
For best results, ensure your sourdough starter is active and bubbly. You can customize the bread with herbs or seeds to suit your taste.
