- 2 cups sourdough starter
- 3 cups all-purpose flour
- 1/2 cup cold butter, cut into cubes
- 1 cup shredded cheese (Swiss or cheddar)
- 1 cup sliced ham
- 1/4 cup sugar
- 1/2 cup milk
- 1 egg (for egg wash)
- 1 teaspoon salt
- 1 tablespoon yeast (optional)
Instructions
- Combine the sourdough starter, sugar, and milk in a large bowl.
- Add the flour and salt gradually, stirring until a soft dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- Roll the dough into a rectangle and spread cold butter over two-thirds of the surface.
- Fold the uncovered third over the buttered section, then fold the remaining third over.
- Roll it out again and refrigerate for 30 minutes.
- Cut the dough into triangles, placing ham and cheese on each and roll from the wide end.
- Place croissants on a baking sheet lined with parchment and let rise for 20-30 minutes.
- Preheat the oven to 375°F (190°C) and brush the tops with egg wash.
- Bake for 20-25 minutes until golden brown.
Notes
For make-ahead convenience, prepare the dough the night before and refrigerate it. You can also experiment with different cheese and ham combinations.
