Description

Delightful Sourdough Ham & Cheese Croissants featuring flaky layers filled with savory ham and creamy cheese, perfect for brunch or snacking.


Ingredients

  • 2 cups sourdough starter
  • 3 cups all-purpose flour
  • 1/2 cup cold butter, cut into cubes
  • 1 cup shredded cheese (Swiss or cheddar)
  • 1 cup sliced ham
  • 1/4 cup sugar
  • 1/2 cup milk
  • 1 egg (for egg wash)
  • 1 teaspoon salt
  • 1 tablespoon yeast (optional)

Instructions

  1. Combine the sourdough starter, sugar, and milk in a large bowl.
  2. Add the flour and salt gradually, stirring until a soft dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Roll the dough into a rectangle and spread cold butter over two-thirds of the surface.
  5. Fold the uncovered third over the buttered section, then fold the remaining third over.
  6. Roll it out again and refrigerate for 30 minutes.
  7. Cut the dough into triangles, placing ham and cheese on each and roll from the wide end.
  8. Place croissants on a baking sheet lined with parchment and let rise for 20-30 minutes.
  9. Preheat the oven to 375°F (190°C) and brush the tops with egg wash.
  10. Bake for 20-25 minutes until golden brown.

Notes

For make-ahead convenience, prepare the dough the night before and refrigerate it. You can also experiment with different cheese and ham combinations.
