Description

Ingredients

  • 1 cup sourdough discard
  • 1 cup milk
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 425°F (220°C) and grease your popover pan or muffin tin with melted butter.
  2. Whisk together the sourdough discard, milk, and eggs until frothy.
  3. Mix the flour and salt in another bowl.
  4. Incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
  5. Fold in the melted butter until smooth.
  6. Fill each cup of the greased pan about three-quarters full with batter.
  7. Bake for 20-25 minutes until golden and puffed.
  8. Brush with melted butter and sprinkle with cinnamon-sugar before serving warm.

Notes

Allow ingredients to reach room temperature for better mixing and rising. You can prepare the batter ahead of time and refrigerate it until ready to bake.
