- 500g bread flour
- 350g water
- 100g active sourdough starter
- 10g salt
Instructions
- Mix 500g of bread flour with 350g of water in a mixing bowl until no dry flour remains. Cover and let it rest for about 1 hour.
- Add 100g of active sourdough starter and 10g of salt, and mix until well combined.
- Cover the bowl with a damp cloth and let it rise for 4-5 hours, performing stretch and folds every 30 minutes for the first 2 hours.
- Tip the dough onto a lightly floured surface and shape it into a round. Let it rest for 20 minutes.
- Place the shaped dough into a proofing basket seam side up, cover and let it proof for 2-3 hours at room temperature or overnight in the fridge.
- Preheat your Dutch oven in the oven at 450°F (232°C) for at least 30 minutes.
- Remove the Dutch oven carefully and score the top of the dough with a lame or sharp knife.
- Transfer the dough (with parchment) into the hot pot, cover and bake for 30 minutes. Remove the lid and bake for an additional 15-20 minutes until golden brown.
- Cool the bread on a rack for at least an hour before slicing.
Notes
Ensure your sourdough starter is active for the best results. Baking time may vary; check for a golden color and hollow sound when tapped.
