- 8 oz rice noodles
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup cucumber, sliced
- 1/2 cup red cabbage, shredded
- 1/4 cup green onions, chopped
- 1/2 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp sesame oil
- 1 tbsp sriracha (adjust to taste)
- 1/4 cup water (to thin sauce)
- Chopped peanuts for garnish
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, sriracha, and water until smooth.
- In a large mixing bowl, combine the cooked noodles with the sliced bell peppers, carrots, cucumber, red cabbage, and green onions.
- Pour the peanut sauce over the noodle and veggie mixture, tossing to coat evenly.
- Serve immediately, garnished with chopped peanuts.
Notes
- Feel free to add your favorite protein, such as tofu or chicken.
- This dish can be served cold or warm.
- Adjust the spiciness by adding more or less sriracha.
