Description

A delicious and vibrant dish featuring spicy Thai peanut noodles tossed with crunchy vegetables, perfect for a quick meal.


Ingredients

  • 8 oz rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup cucumber, sliced
  • 1/2 cup red cabbage, shredded
  • 1/4 cup green onions, chopped
  • 1/2 cup peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp sesame oil
  • 1 tbsp sriracha (adjust to taste)
  • 1/4 cup water (to thin sauce)
  • Chopped peanuts for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, sriracha, and water until smooth.
  3. In a large mixing bowl, combine the cooked noodles with the sliced bell peppers, carrots, cucumber, red cabbage, and green onions.
  4. Pour the peanut sauce over the noodle and veggie mixture, tossing to coat evenly.
  5. Serve immediately, garnished with chopped peanuts.

Notes

  • Feel free to add your favorite protein, such as tofu or chicken.
  • This dish can be served cold or warm.
  • Adjust the spiciness by adding more or less sriracha.
