- 1 tablespoon lime juice
- 1 cup coconut yogurt
- 1 tablespoon maple syrup

Instructions
- Preheat your oven to 400°F (200°C).
- Cut your watermelon into fry-shaped pieces, approximately the size of traditional fries.
- Pat the watermelon fries dry with paper towels to absorb excess moisture.
- Toss the watermelon fries with chili powder and salt in a mixing bowl until coated.
- Spread the fries evenly on a baking sheet, ensuring they do not touch.
- Roast for about 15-20 minutes, flipping halfway through until slightly browned and crisped.
- Mix the coconut yogurt, lime juice, maple syrup, and lime zest in a separate bowl until smooth.
- Serve fries warm with the coconut lime dipping sauce, garnished with fresh cilantro.
Notes
Store any leftovers in an airtight container for up to 2 days. For reheating, use an oven at 350°F (175°C) for 5-10 minutes.
