Ingredients

  • 2 tablespoons chili powder
  • 1 tablespoon lime juice
  • 1 cup coconut yogurt
  • 1 tablespoon maple syrup
  • 1 teaspoon lime zest

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut your watermelon into fry-shaped pieces, approximately the size of traditional fries.
  3. Pat the watermelon fries dry with paper towels to absorb excess moisture.
  4. Toss the watermelon fries with chili powder and salt in a mixing bowl until coated.
  5. Spread the fries evenly on a baking sheet, ensuring they do not touch.
  6. Roast for about 15-20 minutes, flipping halfway through until slightly browned and crisped.
  7. Mix the coconut yogurt, lime juice, maple syrup, and lime zest in a separate bowl until smooth.
  8. Serve fries warm with the coconut lime dipping sauce, garnished with fresh cilantro.

Notes
