Description

Delightful bars made with desiccated coconut, fresh strawberries, and a rich dark chocolate coating.


Ingredients

  • 2 cups (180g) desiccated coconut
  • 1/2 cup (120ml) sweetened condensed milk
  • 1/2 cup (75g) fresh strawberries, finely chopped and patted completely dry
  • Pink food coloring (optional)
  • 14 oz (400g) dark chocolate, melted
  • 1 tbsp coconut oil

Instructions

  1. Combine the desiccated coconut and sweetened condensed milk in a large bowl; mix well until thick and sticky.
  2. Fold in the finely chopped strawberries gently, and add pink food coloring if desired.
  3. Shape the mixture into small rectangular bars, placing them on a parchment-lined tray.
  4. Freeze for at least 1 hour until firm.
  5. Melting the dark chocolate using a double boiler or microwave, stir in coconut oil until smooth.
  6. Dip each bar into the melted chocolate, letting excess drip off, then return them to the tray.
  7. Freeze for an additional 15 minutes until the chocolate is set.
  8. Serve straight from the freezer for a refreshing treat.

Notes

These bars freeze beautifully; store in an airtight container. Make them in advance for a delightful treat.
