Delightful bars made with desiccated coconut, fresh strawberries, and a rich dark chocolate coating.
Ingredients

- 2 cups (180g) desiccated coconut
- 1/2 cup (120ml) sweetened condensed milk
- 1/2 cup (75g) fresh strawberries, finely chopped and patted completely dry
- Pink food coloring (optional)
- 14 oz (400g) dark chocolate, melted
- 1 tbsp coconut oil
Instructions
- Combine the desiccated coconut and sweetened condensed milk in a large bowl; mix well until thick and sticky.
- Fold in the finely chopped strawberries gently, and add pink food coloring if desired.
- Shape the mixture into small rectangular bars, placing them on a parchment-lined tray.
- Freeze for at least 1 hour until firm.
- Melting the dark chocolate using a double boiler or microwave, stir in coconut oil until smooth.
- Dip each bar into the melted chocolate, letting excess drip off, then return them to the tray.
- Freeze for an additional 15 minutes until the chocolate is set.
- Serve straight from the freezer for a refreshing treat.
Notes
These bars freeze beautifully; store in an airtight container. Make them in advance for a delightful treat.
