Ingredients

  • 23 tbsp olive oil
  • Salt & black pepper, to taste
  • Stuffing of choice (e.g., Spinach & feta, Mushroom & cheese, Herb & garlic)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the chicken breasts by slicing them horizontally, careful not to cut all the way through.
  3. Season the chicken inside and out with salt and black pepper.
  4. Stuff the chicken breasts with your choice of stuffing, packing it in without overstuffing.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until cooked through.
  8. Let the chicken rest for a few minutes before slicing and serving.
