- 2–3 tbsp olive oil
- Salt & black pepper, to taste
- Stuffing of choice (e.g., Spinach & feta, Mushroom & cheese, Herb & garlic)
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing them horizontally, careful not to cut all the way through.
- Season the chicken inside and out with salt and black pepper.
- Stuff the chicken breasts with your choice of stuffing, packing it in without overstuffing.
- Heat olive oil in a skillet over medium heat.
- Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until cooked through.
- Let the chicken rest for a few minutes before slicing and serving.
