Instructions
- Combine the finely chopped bell peppers, unsweetened applesauce, apple cider vinegar, preferred sweetener, lemon juice, and a pinch of salt in a medium saucepan.
- Set the saucepan over medium heat and bring the mixture to a steady boil.
- Reduce the heat and allow the jam to simmer for about 15 to 20 minutes, stirring occasionally.
- If using pectin, mix it in according to packet instructions until thickened to your liking.
- Pour the jam into sterilized jars while warm, leaving space for expansion.
- Allow the jars to cool completely before sealing and store in the refrigerator.
