- 1 package (3 oz) berry-flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 2 cups whipped topping
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
Instructions
- Combine 1 cup of boiling water with the berry gelatin in a medium mixing bowl and stir until dissolved. Add 1 cup of cold water and let cool slightly.
- Beat the softened cream cheese in another bowl with an electric mixer until smooth, then mix in the powdered sugar and gently fold in the whipped topping.
- Mix the graham cracker crumbs with melted butter and press into the bottom of a 9×13 inch pan to form the crust.
- Spread half of the cream cheese mixture over the graham cracker crust, then pour half of the cooled gelatin over it and refrigerate until set (at least 2 hours).
- Scatter the mixed berries evenly over the set layer.
- Spread the remaining cream cheese mixture over the berries and top with the last of the gelatin mixture.
- Cover and refrigerate for another 4 hours or until fully set.
- Slice into squares and serve chilled.
Notes
Prepare this dessert a day in advance for best flavor. Avoid rushing the chilling time between layers to maintain structure.
