A comforting and delicious pasta bake featuring sweet corn and fresh basil in a creamy sauce.
Ingredients

- 300g pasta
- 1 cup sweet corn (fresh or frozen)
- 1 cup heavy cream
- 1 cup grated cheese (mozzarella or cheddar)
- 1/2 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Cook the pasta according to package instructions until al dente, then drain.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add sweet corn and cook for a few minutes until tender.
- Stir in the heavy cream and bring to a simmer.
- Add the cooked pasta, chopped basil, and half of the grated cheese. Mix well.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like spinach or bell peppers for extra flavor.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- For a lighter version, substitute heavy cream with a low-fat alternative.
