A delicious and healthy lasagna made with layers of sweet potatoes, spinach, and cheese, perfect for a comforting meal.
Ingredients

- 2 large sweet potatoes, thinly sliced
- 4 cups fresh spinach
- 2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 egg
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer half of the sweet potato slices over the sauce.
- Add half of the spinach on top of the sweet potatoes.
- Spread half of the ricotta mixture over the spinach.
- Sprinkle half of the mozzarella cheese over the ricotta.
- Repeat the layers with the remaining ingredients, finishing with marinara sauce and mozzarella on top.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a vegan version, substitute ricotta and mozzarella with plant-based alternatives.
- Feel free to add other vegetables like mushrooms or zucchini.
- This dish can be made ahead of time and stored in the refrigerator before baking.
