Ingredients

  • 200g soba noodles
  • 1 ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 cucumber, julienned
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sriracha
  • 1 tablespoon sesame oil
  • Juice of 1 lime

Instructions

  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the cooked soba noodles, diced mango, red bell pepper, cucumber, green onions, and cilantro.
  3. In a small bowl, whisk together the soy sauce, honey, sriracha, sesame oil, and lime juice to create the dressing.
  4. Pour the dressing over the noodle mixture and toss gently to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
