- 1 ripe mango, diced
- 1 red bell pepper, sliced
- 1 cucumber, julienned
- 2 green onions, chopped
- 1/4 cup cilantro, chopped

- 1 tablespoon honey
- 1 tablespoon sriracha
- 1 tablespoon sesame oil
- Juice of 1 lime
Instructions
- Cook the soba noodles according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked soba noodles, diced mango, red bell pepper, cucumber, green onions, and cilantro.
- In a small bowl, whisk together the soy sauce, honey, sriracha, sesame oil, and lime juice to create the dressing.
- Pour the dressing over the noodle mixture and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
