Description

A delicious and creamy Tex-Mex Chicken Alfredo Bake that combines the flavors of traditional Alfredo with a spicy twist, perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz fettuccine pasta
  • 2 cups Alfredo sauce
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, drained
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the fettuccine pasta according to package instructions; drain and set aside.
  3. In a large bowl, combine the shredded chicken, Alfredo sauce, salsa, black beans, corn, chili powder, cumin, salt, and pepper.
  4. Add the cooked fettuccine to the chicken mixture and stir until well combined.
  5. Transfer the mixture to a greased baking dish and top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
