- 2 cups cooked chicken, shredded
- 8 oz fettuccine pasta
- 2 cups Alfredo sauce
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the fettuccine pasta according to package instructions; drain and set aside.
- In a large bowl, combine the shredded chicken, Alfredo sauce, salsa, black beans, corn, chili powder, cumin, salt, and pepper.
- Add the cooked fettuccine to the chicken mixture and stir until well combined.
- Transfer the mixture to a greased baking dish and top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add more vegetables like bell peppers or onions for extra flavor.
- This dish can be made ahead of time and stored in the refrigerator before baking.
