Description

Tofu Pad Thai with Tamarind Sauce is a delicious and flavorful dish that combines stir-fried rice noodles with tofu, vegetables, and a tangy tamarind sauce.


Ingredients

  • 8 oz rice noodles
  • 1 block (14 oz) firm tofu, cubed
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 1 cup green onions, chopped
  • 2 eggs, lightly beaten
  • 3 tablespoons tamarind paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon lime juice
  • Chopped peanuts for garnish
  • Lime wedges for serving

Instructions

  1. Soak the rice noodles in warm water for about 30 minutes until softened, then drain.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Push the tofu to one side of the skillet and pour the beaten eggs into the other side, scrambling them until cooked.
  5. Add the soaked noodles, tamarind paste, soy sauce, sugar, and lime juice to the skillet. Toss everything together until well combined.
  6. Stir in the bean sprouts and green onions, cooking for an additional 2-3 minutes.
  7. Serve hot, garnished with chopped peanuts and lime wedges.

Notes

  • For a spicier version, add red pepper flakes or sliced chili peppers.
  • Feel free to add other vegetables like bell peppers or carrots.
