- 8 oz rice noodles
- 1 block (14 oz) firm tofu, cubed
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup bean sprouts
- 1 cup green onions, chopped
- 2 eggs, lightly beaten
- 3 tablespoons tamarind paste
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon lime juice
- Chopped peanuts for garnish
- Lime wedges for serving
Instructions
- Soak the rice noodles in warm water for about 30 minutes until softened, then drain.
- In a large skillet, heat the vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides.
- Add the minced garlic and cook for another minute until fragrant.
- Push the tofu to one side of the skillet and pour the beaten eggs into the other side, scrambling them until cooked.
- Add the soaked noodles, tamarind paste, soy sauce, sugar, and lime juice to the skillet. Toss everything together until well combined.
- Stir in the bean sprouts and green onions, cooking for an additional 2-3 minutes.
- Serve hot, garnished with chopped peanuts and lime wedges.
Notes
- For a spicier version, add red pepper flakes or sliced chili peppers.
- Feel free to add other vegetables like bell peppers or carrots.
- Make sure to use firm tofu for the best texture.
