Description

A delightful blend of seasoned ground beef, tortillas, and a fiesta of toppings, this Ultimate Taco Casserole is perfect for gatherings and weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 8 small flour or corn tortillas
  • 1 cup sour cream
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded cheddar cheese
  • 1 cup enchilada sauce
  • 1/2 cup sliced black olives (optional)
  • Diced tomatoes, sliced green onions, chopped fresh cilantro, sliced jalapeños, avocado, sour cream, salsa (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook for 6–8 minutes until browned.
  3. Add the minced garlic and cook for about 30 seconds until fragrant.
  4. Stir in the taco seasoning and water. Let it simmer for 2–3 minutes.
  5. Add the salsa, black beans, and corn. Stir and let simmer for another 3–4 minutes.
  6. Spread about 1/3 cup of enchilada sauce over the bottom of the baking dish.
  7. Arrange a layer of tortillas over the sauce.
  8. Spread half of the beef mixture over the tortillas.
  9. Spoon half of the sour cream over the beef.
  10. Sprinkle about 1/3 of the shredded cheese on top.
  11. Repeat layers with remaining ingredients.
  12. Cover with foil and bake for 20 minutes.
  13. Remove the foil and bake for another 10–15 minutes until cheese is melted and golden.
  14. Let it rest for 5–10 minutes before serving. Top with desired toppings.
