Ingredients

  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon chili paste
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 200g ramen noodles
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 carrot, julienned
  • 2 green onions, chopped
  • Tofu, cubed (optional)

Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add garlic and ginger, sauté until fragrant.
  3. Stir in miso paste, soy sauce, and chili paste.
  4. Pour in vegetable broth and bring to a simmer.
  5. Add mushrooms, bok choy, and carrots; cook until tender.
  6. Meanwhile, cook ramen noodles according to package instructions.
  7. Drain noodles and divide into bowls.
  8. Pour the spicy miso broth and vegetables over the noodles.
  9. Top with green onions and tofu if using.
  10. Serve hot and enjoy!

Notes

  • Adjust the spice level by adding more or less chili paste.
  • Feel free to add other vegetables like spinach or bell peppers.
  • For a richer flavor, let the broth simmer longer.
