- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon chili paste
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 200g ramen noodles
- 1 cup mushrooms, sliced
- 1 cup bok choy, chopped
- 1 carrot, julienned
- 2 green onions, chopped
- Tofu, cubed (optional)
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Stir in miso paste, soy sauce, and chili paste.
- Pour in vegetable broth and bring to a simmer.
- Add mushrooms, bok choy, and carrots; cook until tender.
- Meanwhile, cook ramen noodles according to package instructions.
- Drain noodles and divide into bowls.
- Pour the spicy miso broth and vegetables over the noodles.
- Top with green onions and tofu if using.
- Serve hot and enjoy!
Notes
- Adjust the spice level by adding more or less chili paste.
- Feel free to add other vegetables like spinach or bell peppers.
- For a richer flavor, let the broth simmer longer.
