Ingredients

  • 1 carrot, julienned

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Chopped peanuts and green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add bell pepper, snap peas, and carrot; sauté for 3-4 minutes until tender.
  3. Stir in the zucchini noodles and cook for an additional 2-3 minutes.
  4. In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, and ginger.
  5. Pour the peanut sauce over the vegetables and toss to combine.
  6. Cook for another minute until everything is heated through.
  7. Serve hot, garnished with chopped peanuts and green onions.
