- 350 g water
- 100 g active sourdough starter
Instructions
- Combine the flour and water in a large bowl, mixing until no dry flour remains.
- Add the active sourdough starter, folding it through until fully blended into the dough.
- Cover the bowl with a clean kitchen towel and let the dough rest for about 30 minutes.
- Perform stretch and folds every 30 minutes for 4 hours.
- Shape the dough into a round loaf.
- Place the loaf seam side up in a floured proofing basket and cover it.
- Refrigerate overnight for cold proofing.
- Preheat the oven to 230°C (450°F) the next day.
- Transfer the loaf onto a baking surface and score the top with a sharp knife.
- Bake for about 30-35 minutes, until golden brown and crusty.
- Let the loaf cool on a wire rack before slicing.
